I recently purchased a bunch of extra eggs because they were on sale and determined perhaps I had too many. I also had some leftover ham in the fridge, so I was trying to figure out what to do with the eggs and ham. Then, it hit me: why not make and can a complete breakfast in a jar that I can grab and go in the mornings?
I threw together some diced potatoes, dehydrated bell pepper, dehydrated onion, and dehydrated mushrooms, along with the ham and eggs, and mixed it all up with some milk and shredded cheddar cheese. After popping it all into some pint-sized canning jars and using my trusty pressure canner, I had myself some shelf-stable breakfast that I could enjoy for up to 6 months!
I'm not a canning expert, but I followed some basic guidelines and tips I found online to ensure my breakfast jars would be safe to eat and last a while. Plus, it was super easy to make, and I love that I can just pop a jar in the microwave for a few minutes and have a delicious breakfast ready to go.
